Vietnamese Shrimp Soup

8 oz unpeeled cooked shrimp
1 bulb lemon grass, split in half lengthwise
1 (2 inch) piece of gingerroot, peeled
3- 3/4 cups light chicken stock
1 tablespoon lime juice
1/2 teaspoon crushed dried red chilies
1 tbs. fish sauce or soy sauce
4 ozs. bok choy leaves, finely shredded

Peel shrimp and set aside.  In a large saucepan combine shells, lemon grass, gingerroot and stock.  Bring to a boil.  Simmer 5 mins. then let stand 15 mins.

Strain stock through a sieve set over a bowl.   Clean pan and return stock to pan.  Stir in lime juice, red chilies, fish sauce and bok choy.  Simmer 2 mins.  Stir shrimp into soup and cook 1 min.  Makes 4 servings.
